So um, sitting here right now, I'm thinking my thermie is pretty amazing! Thermie is currently mixing and cooking meat sauce for my lasangne, having already made the bechamel sauce previous to this, while I sit here and play on my computer! Win! 

I'm off to do a Tupperware party tonight, not too far to go for this one, as it's in the local town, so hopefully not too late tonight. Meanwhile, FIL (Father in Law) is overseas at the moment, so have invited MIL (did you guess? Mother in Law), to dinner, having forgotten I was going out! Oh well, don't have to leave until 6:30pm, so will hopefully have everyone fed before then, with Thermie's help :-)

Lasagne will be finished soon, popped in the fridge ready for an easy post-work dinner on Wednesday night. Then I am going to try the butter chicken recipe from the EDC (everyday cookbook). I am excited about this one, as I rarely get to eat those kinds of dishes as I have a problem with chilli (the kind of problem where I get blood blisters in my mouth and if I really overeat on the hot stuff, bad tummy pains too), this recipe has no chilli at all, so we'll see if it's as yummy as I hope.

Last night we had creamy tomato and salami pasta (also from the EDC). I wasn't all that excited about it to start with, but decided to give it a go, as it is all cooked in the one go and soooo easy! Have to love anything that only requires one cooking dish! Anyway, wasn't much of a hit with the kids surprisingly, but Mr Farmer and I loved it! Had the leftovers for lunch today and it was still really yummy, even reheated. Put it in the thermoserver once it had finished cooking, which meant the pasta continued to cook and it probably would have been better straight away I think. Was going to make custard for dessert, then remembered that we still had leftover sticky date pudding from the night before. Mmmmmmm.......

So the night before, we had MIL and BIL join us for dinner and had made the apple sauce from the EDC, to go with Roast Duck and Fried Rice. Sounds like a strange combination I know, but it works. I have made it once before, but made a plum sauce to go with it last time, which I do think worked better, problem this time, was I forgot to buy the plums! The apple sauce worked well and was VERY simple to make, you don't even peel the apples! Anyway, we followed it up with the aforementioned sticky date pudding and there were some very contented full tummies around the table I think.

So other than pancake mixes and custards, I think that's about it so far. I'm planning to try a cauliflower soup tomorrow for lunch and see if I can come up with an easy dinner for Thursday night post-work ( I hate having to cook a whole meal when I get home from work!), maybe something with a bit of stew meat, there is plenty of stewing beef in the freezer at the moment!

Learning to love yourself

So I am on this major journey at the moment. Growing, changing, learning about me. Most of all, learning to love myself and be true to myself. We have had lots of visitors this week, so I have been cooking up a storm! Well, Julia and I have ;-) Chocolate chip cookies, mini quiches, tuna mornay, fried rice, and of course more dip! Loving it! Have posted my first two recipes on the Thermomix recipe community , which is quite exciting! Prawn Risotto

Just quickly, this was tonights dinner, super yum, so thought I would share the recipe. The whole family loved it! Enjoy! Prawn Risotto. 2 carrots 1 stick celery 4 mushrooms 4 cloves garlic Handful parsley 50gm olive oil 100gm white wine 400gm aborio rice (I use mixture aborio and basmati to lower GI) 2 tsp TMX veg stock 180gm cream cheese 140gm cream 900gm water 400gm frozen uncooked prawns (I use tails removed as they often come off when cooking otherwise). Put vegetables, garlic and parsley in TMX process speed 7 for 5 seconds. Add oil and sauté for 3mins at 100, speed 1, MC off. Insert butterfly. Add wine and rice, sauté 2mins reverse speed soft 100degrees. Add stock, cream cheese, cream and water (and prawns if still frozen). Cook 20mins, reverse speed soft at 100degrees, with basket in place of measuring cup. If prawns are completely thawed, add after 6 mins. Pour into thermoserver and wai...
